Black Bean Gluten-free Fudge Brownies

Ingredients

  • 1 cup black beans
  • ½ cup mashed sweet potato (not canned)
  • 2 tbs coconut oil
  • 8 dates
  • ½ cup applesauce (I use a freshly blended red apple)
  • ¼ cup molasses or pure maple syrup
  • 1 ½ cup pure vanilla extract or ½ of a vanilla bean
  • ¾ cup gluten free flour
  • ½ cup cocoa
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • ½ cup walnuts

Instructions

Preheat oven to 350°.

Boil the sweet potato until soft enough to mash.

Blend a whole red apple.

Mix all ingredients in a blender until smooth.

Dust the bottom of pan with coconut flour and the sides of pan with coconut oil.

Pour mixture into pan.

Bake for 40 minutes.

Let cool. Cut. Enjoy
